Chicken & Alphabet Soup With Peas

Adapted from 101 Pasta Recipes

  • 3 med carrots, finely diced
  • 2 stalks celery, finely diced
  • 6 cups chicken broth
  • 4 ozs chicken breast strips, cooked and diced
  • 4 ozs frozen peas, thawed
  • 1 tsp salt
  • 1 1/2 c alphabet pasta, uncooked
In a large saucepan, cook carrots and celery over medium heat until soft. Stir in chicken broth, diced chicken, peas, and salt. Bring to a boil. Add alphabet pasta. Bring to a boil. Reduce heat to low and cook ten minutes, or until pasta is done.
