Cherries Jubilee Cheesecake Bars

Adapted from General Mills, Inc.

  • Crust:
  • 18 1/4 ozs cherry chip cake mix
  • 1/4 cup Country Crock Light Spread
  • Frosting:
  • 3 cups powdered sugar
  • 1/4 cup margarine, softened
  • 5 tbsps fat-free milk
  • 8 whole maraschino cherries, drained and chopped
  • 2 drops red food coloring
  • Add to homemade frosting
  • 16 ozs fat-free cream cheese, softened
  • 1 whole egg
  • 1/2 whole egg whites
Cherries Jubilee Cheesecake Bars
Preheat oven to 325. Prepare a 13"x9" pan with cooking spray; set aside. In a mixing bowl, combine dry cake mix and spread until crumbly. Reserve one cup mixture. Press remaining crumb mixture into bottom of prepared pan; set aside. Meanwhile, to make frosting, combine powdered sugar, margarine, milk, cherries, and red food coloring. Mix until spreading consistency. Add cream cheese to frosting. Mix until smooth. Add egg and egg whites. Mix until combined. Pour over crust in pan. Sprinkle top evenly with reserved crumb mixture. Bake for one hour, or until set. Cool. Before serving refrigerate bars for two hours.
