Cheesecake Topped Brownies

Adapted from Cookies, Bars, & Muffins Cookbook

  • 20 ozs reduced fat brownie mix
  • 1/2 cup water
  • 1 whole egg
  • 1 tbsp olive oil
  • 8 ozs fat-free cream cheese
  • 2 tbsps margarine, softened
  • 1 tbsp cornstarch
  • 14 ozs milk chocolate frosting
  • 1 whole egg
  • 2 tsps pure vanilla extract
  • 16 ozs milk chocolate frosting
Cheesecake Topped Brownies
Preheat oven to 350. Prepare a 13"x9" pan with cooking spray; set aside. In a mixing bowl, combine brownie mix, water, one egg, and oil. Mix until all is moistened; set aside. Meanwhile, combine cream cheese, margarine, and cornstarch in a mixing bowl. Mix until smooth. Gradually, add sweetened condensed milk, remaining egg,and vanilla extract. Mix well. Pour over brownie batter in pan. Bake for 40 minutes, or until browned on top. Spread frosting over cooled brownies.
