Carrot Raisin Bars

Adapted from General Mills, Inc.

  • Bars:
  • 18 1/4 ozs carrot cake mix
  • 1/2 c water
  • 2 whole eggs
  • 1 tbsp olive oil
  • 3/4 c raisins
  • 1/2 c walnuts, chopped
  • Frosting:
  • 8 ozs fat-free cream cheese, softened
  • 1/4 c margarine, softened
  • 1 tsp pure vanilla extract
  • 16 ozs powdered sugar
Carrot Raisin Bars
Preheat oven to 350. Prepare a jelly roll pan with cooking spray; set aside. In a mixing bowl, combine cake mix, water, eggs, and oil. Add raisins, and walnuts. Mix until moistened. Spread batter into prepared pan. Bake for 20 minutes, or until bars spring back when touched. Meanwhile, to prepare frosting, combine cream cheese, margarine, vanilla extract, and powdered sugar. Mix until smooth. Spread evenly over cooled bars. For bars, cut eight rows by 6 rows.
