Carousel Salad

Adapted from Salad Book

  • 8 ozs whole wheat rotini pasta, cooked and drained
  • 1 cup carrots, shredded
  • 1/2 cup celery, chopped
  • 8 ozs light mayonnaise
  • 2 tbsps dill pickle relish
  • 2 tbsps dill pickle liquid
  • 4 pieces bacon slices, cooked and crumbled
  • 1 tsp salt
Carousel Salad
In a mixing bowl, combine cooked pasta, carrots, celery, mayonnaise, bacon, pickle relish, pickle juice, and salt. Mix well. Chill several hours before serving.
