                                cocoa powder, sifted

                                walnuts, chopped

                                light brown sugar, packed

                                granulated sugar

                                1/4 cup
                                olive oil

                                3     whole
                                eggs

                                1     tsp

Preheat oven to 350. Prepare 18 standard muffin tins with cooking spray; set aside. In a mixing bowl, combine flour, cocoa powder, and nuts. Mix well and set aside. In another mixing bowl, combine brown sugar, granulated sugar, oil, eggs, and vanilla extract. Mix well. Add to dry ingredients and mix until all is moistened. Fill each muffin tin 2/3 full with batter. Bake for 25 minutes, or until toothpick inserted in center comes out clean.
