Broccoli Turkey Brunch Casserole

Adapted from Healthy Cooking Magazine

  • 1 1/2 cups fat-free milk
  • 10 3/4 ozs low-fat cream of chicken soup
  • 8 ozs egg whites, slightly beaten
  • 1/4 cup light sour cream
  • 1/4 tsp black pepper
  • 1/4 tsp poultry seasoning
  • 12 ozs turkey light meat, skinless, cooked and cubed
  • 16 ozs frozen chopped broccoli, thawed and drained
  • 2 cups savory herbs stuffing mix
  • 4 ozs cheddar cheese, divided
Broccoli Turkey Brunch Casserole
Preheat oven to 350. Prepare a 9"x13" pan with cooking spray; set aside. In a mixing bowl, combine milk, soup, egg whites, sour cream, black pepper, and poultry seasoning. Add turkey, broccoli, stuffing, and 3/4 cup cheese. Place mixture into prepared pan. Bake, uncovered for 40 minutes. Sprinkle with remaining cheese. Bake five minutes longer or until toothpick inserted in center comes out clean.
