Broccoli and Carrot Cheese Bake

Adapted from Casseroles

  • 12 ozs frozen sliced carrots, thawed and cooked
  • 10 ozs frozen broccoli flowerets, thawed and cooked
  • 14 ozs Italian white bread, cut into 1" pieces
  • 3 whole eggs
  • 2 cups fat-free milk
  • 3 tbsps margarine, melted
  • 1 tsp salt
  • 1/4 tsp black pepper
  • 4 ozs reduced fat Swiss cheese, shredded and divided
Broccoli and Carrot Cheese Bake
Preheat oven to 325. Prepare a 9"x13" pan with cooking spray; set aside. In a large bowl, combine cooked vegetables, bread cubes, and two ounces of cheese. Mix well. In a liquid measure, combine milk, margarine, salt, and black pepper. Mix well. Pour over vegetables in bowl. Place mixture evenly into prepared pan. Sprinkle remaining cheese over top. Bake for 30 minutes, or until edges are browned.
