Blueberry Waffles

Adapted from General Mills, Inc.

  • 17 1/2 ozs blueberry muffin mix
  • 1 1/4 c water
  • 2 whole eggs, separated
  • 2 tbsps olive oil
Blueberry Waffles
Heat Belgian waffle iron and spray with cooking spray. Drain blueberries from mix. In a mixing bowl, combine dry muffin mix, water, oil, and egg yolks. Mix until blended; set aside. Meanwhile, beat egg whites until soft peaks form. Fold egg whites and blueberries into batter. Pour half cup batter per waffle onto hot waffle iron. Bake for four minutes, or as directed from your waffle iron instructions.
