Blueberry Streusel Coffee Cake

Adapted from General Mills, Inc.

  • 16 ozs pound cake mix
  • 1 1/2 cups frozen blueberries
  • 8 ozs fat-free plain yogurt
  • 2 whole eggs
  • Topping:
  • 1/4 cup walnuts, chopped
  • 1/4 cup light brown sugar, packed
  • 2 tbsps unbleached flour
  • 1 tbsp margarine
  • 1 tsp cinnamon
Preheat oven to 350. Prepare a 9" square pan with cooking spray; set aside. In a mixing bowl, combine cake mix, blueberries, yogurt, and eggs. Mix well. Pour batter into prepared pan; set aside. To prepare topping, combine walnuts, brown sugar, flour, margarine, and cinnamon in a small bowl. Mix until crumbly. Sprinkle topping evenly over batter in pan. Bake for 50 minutes, or until toothpick inserted into center comes out clean.
