Bean Burger Bake

Adapted from The Pillsbury Company

  • 1 lb ground chicken breast
  • 1/2 cup onions, chopped
  • 31 ozs no-salt-added dark red kidney beans, rinsed and drained
  • 15 1/2 ozs canned red beans, rinsed and drained
  • 1/2 cup light brown sugar, packed
  • 1 tsp salt
  • 1/2 cup ketchup
  • 1 tbsp white vinegar
  • 1 tbsp yellow mustard
  • 1/2 cup cheddar cheese, shredded
Preheat oven to 350. Prepare a 2-quart casserole dish with cooking spray; set aside. In a large saucepan, cook chicken until no longer pink. Add onions, beans, brown sugar, salt, ketchup, vinegar, and mustard. Mix well. Pour mixture into prepared dish. Sprinkle cheese over top. Bake for 30 minutes or until cheese has melted.
