Barbecued Chicken on a Bun

Adapted from Jackie Olden's Microwave Cookbook

  • 1 lb ground chicken breast skinless
  • 1 cup onions, chopped
  • 1 cup celery, sliced
  • 5 ozs ketchup
  • 1 tbsp yellow mustard
  • 1 tbsp white vinegar
  • 1 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsps chili powder
  • 9 whole hamburger buns, toasted
Barbecued Chicken on a Bun
In a large glass bowl, combine chicken, onions, and celery. Mix well. Microwave on high for five minutes. Stir to break up chicken and microwave again on high for two minutes or until chicken is no longer pink. In a small bowl, combine ketchup, mustard, vinegar, salt, black pepper, and chili powder. Stir into chicken mixture. Microwave on medium-high for eight minutes, stirring after half the cooking time. Microwave again on medium-high for five minutes, or until sauce thickens. Spread one cup mixture onto each bun.
