Banana Wheat Muffins

Adapted from Dr. Cookie Cookbook

  • 1/2 cup unbleached flour
  • 1/2 cup whole wheat flour
  • 1 cup wheat germ
  • 1/4 cup granulated sugar
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1 whole egg
  • 1/3 cup molasses
  • 3/4 cup fat-free milk
  • 2 tbsps olive oil
  • 8 ozs bananas, mashed
Preheat oven to 400. Prepare 18 standard muffin pans with cooking spray; set aside. In a mixing bowl, combine flours, wheat germ, sugar, baking powder, baking soda, and cinnamon. Mix well. Add egg, molasses, milk, bananas, and oil. Mix until all is moistened. Spoon batter evenly into prepared pans. Bake for 20 minutes, or until toothpick inserted in center comes out clean.
