Banana Nut Cake

Adapted from Quick Fixes with Mixes

  • Cake:
  • 15 1/4 ozs yellow cake mix
  • 1 tsp cinnamon
  • 1/2 cup walnuts, chopped
  • 1 cup low-fat buttermilk
  • 1 cup bananas, mashed, 2 bananas
  • 3 whole eggs
  • 1 tbsp olive oil
  • 1 tsp pure vanilla extract
  • Glaze:
  • 1/2 cup honey
Banana Nut Cake
Preheat oven to 350. Prepare a 9"x13' pan with cooking spray; set aside. In a mixing bowl, combine cake mix, walnuts, cinnamon, buttermilk, bananas, eggs, oil, and vanilla extract. Mix until all is moistened. Spread batter evenly into prepared pan. Bake for 30 minutes, or until toothpick inserted into center comes out clean. Spread honey evenly over warm cake.
