Banana Cranberry Spice Muffins

Adapted from General Mills, Inc.

  • 1 whole egg
  • 3/4 cup fat-free milk
  • 3 tbsps olive oil
  • 1 cup bananas, mashed
  • 1 cup All Bran Cereal
  • 1 1/4 cups unbleached flour
  • 3/4 cup granulated sugar
  • 3 tsp baking powder
  • 2 tsps cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp salt
  • 1/2 cup dried cranberries
Banana Cranberry Spice Muffins
Preheat oven to 400. Prepare 12 standard muffins cups with cooking spray; set aside. In a mixing bowl, combine egg, milk, oil, and bananas. Stir in cereal; let stand five minutes. Add flour, sugar, baking powder, cinnamon, nutmeg, and salt. Mix well. Stir in cranberries. Divide batter evenly among prepared muffin cups. Bake for 25 minutes or until inserted in center comes out clean.
