Bacon Swiss Squares

Adapted from Casseroles

  • Crust:
  • 2 cups low-fat baking mix
  • 1/2 cup fat-free milk
  • Filling:
  • 4 whole eggs
  • 12 ozs bacon slices, cooked and crumbled
  • 6 ozs reduced fat Swiss cheese, shredded
  • 1 cup onions, chopped and cooked
  • 1/4 cup fat-free milk
  • 1/2 tsp salt
  • 1/4 tsp black pepper
Bacon Swiss Squares
Preheat oven to 425. Prepare a jelly roll pan with cooking spray: set aside. To prepare crust, combine baking mix and half cup milk. Mix until soft dough forms. Turn dough onto a floured surface and knead five times. Roll into a rectangle. Place onto bottom and half inch up sides of prepared pan; set aside. To prepare filling, combine eggs, bacon crumbs, cheese, onions, remaining milk, salt, and black pepper. Mix until eggs are beaten. Pour evenly into prepared pan. Bake for 15 minutes, or until eggs are set and edges are browned.
