Alphabet Vegetable Soup

Adapted from More Favorite Brand Name Recipes Cookbook

  • 16 ozs frozen sliced carrots, thawed
  • 2 cups celery, chopped
  • 1 cup onions, chopped
  • 2 cups water
  • 2 1/2 cups chicken broth
  • 8 ozs tomato sauce
  • 1 1/4 ozs spaghetti sauce mix
  • 15 ozs no-salt-added creamed corn
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 5 ozs alphabet pasta
Alphabet Vegetable Soup
In a large stockpot, add carrots, celery, and onions. Cook until all is tender. Stir in water, broth, tomato sauce, spaghetti sauce mix, corn, salt, and black pepper. Mix well and simmer, covered for 15 minutes, or until heated through. Add pasta. Cover and simmer again for 20 minutes, or until pasta is done.
