Whole Wheat Banana Muffins

Adapted from Healthy Baking

  • 3 tbsp olive oil
  • 1/2 cup light brown sugar, packed
  • 1 cup bananas, mashed, 2 bananas
  • 2 whole egg
  • 1/4 cup fat-free milk
  • 1 tsp pure vanilla extract
  • 1 cup unbleached flour
  • 1 cup whole wheat flour
  • 1/2 cup wheat germ
  • 2 tsps cinnamon
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 3 tbsp walnuts, chopped
Whole Wheat Banana Muffins
Preheat oven to 375. Prepare 18 standard muffins cups with cooking spray; set aside. In a mixing bowl, combine oil, brown sugar, bananas, eggs, milk, and vanilla extract. Mix well. In a smaller bowl, combine flours, wheat germ, cinnamon, baking powder, baking soda, and walnuts. Mix well. Add dry ingredients to wet ingredients. Mix until all moistened. Fill each muffin cup 2/3 full. Bake for 20 minutes, or until toothpick inserted in center comes out clean.
