White Chocolate Cranberry Muffins

Adapted from Country Woman Christmas

  • 2 cups unbleached flour
  • 1 cup granulated sugar
  • 2 tsps baking powder
  • 1/2 tsp salt
  • 2 whole eggs
  • 1 1/3 cups low-fat buttermilk
  • 2 tbsps olive oil
  • 2 ozs white chocolate chips
  • 2 ozs dried cranberries
White Chocolate Cranberry Muffins
Preheat oven to 400. Prepare 15 standard muffin pans with cooking spray; set aside. In a mixing bowl, combine flour, sugar, baking powder and salt. Add eggs, buttermilk, and oil. Mix until all is moistened. Fold in cranberries and chocolate chips. Fill prepared muffin pans two-thirds full. Bake for 15 minutes or until a toothpick inserted in center comes out clean. Cool for five minutes before removing from pans. Cool completely.
