Tuscan Turkey Slow Cooker Soup

Adapted from Weight Watcher's

  • 16 ozs turkey light meat, skinless, cooked and cubed
  • 16 ozs canned dark red kidney beans, drained
  • 15 ozs tomato sauce
  • 29 ozs no-salt-added diced tomatoes
  • 4 ozs canned mushrooms, drained
  • 1/2 c bell peppers, chopped
  • 1/2 c onions, chopped
  • 2 stalks celery, chopped
  • 3 tsps garlic, minced
  • 2 c water
  • 1 tbsp Italian seasoning
Tuscan Turkey Slow Cooker Soup
In a 3 1/2-quart cooker, combine turkey, beans, tomato sauce, tomatoes, mushrooms, bell peppers, onions, celery, garlic cloves, water, and Italian seasoning. Mix well. Cover and cook on low for four hours, or until vegetables are tender.
