Three Bean Chili

Adapted from Pillsbury One Dish Meals Cookbook

  • 1 lb ground chicken breast skinless
  • 1 c onions, chopped
  • 1/2 c bell peppers, chopped
  • 29 ozs no-salt-added whole tomatoes
  • undrained and cut up
  • 15 ozs no-salt-added tomato sauce
  • 1 1/4 ozs low-sodium taco seasoning mix
  • 15 1/2 ozs canned dark red kidney beans, drained
  • 15 1/2 ozs canned great northern beans, drained
  • 15 1/2 ozs canned butter beans, drained
Three Bean Chili
In a large skillet, cook chicken, onions, and bell peppers until chicken is no longer pink. Transfer mixture to a 3 1/2-quart cooker. Add tomatoes, tomato sauce, and taco seasoning mix. Mix well. Cover and cook on high for 30 minutes. Stir in all the beans. Reduce heat to low. Cover and cook four more hours, or until heated thoroughly.
