Thick & Chunky Chili Soup

Adapted from

  • 1 lb ground chicken breast skinless
  • 1/2 cup onions, chopped
  • 16 ozs vegetable juice
  • 16 ozs Chili Style tomatoes, undrained
  • 15 ozs canned chili beans, undrained
  • 5 ozs frozen corn, thawed
  • 2 tbsps chili powder
  • 1 tsp salt
Thick & Chunky Chili Soup
In a large saucepan, cook chicken and onions until chicken is no longer pink. Add juice, tomatoes, chili beans, chili powder and salt. Mix well. Bring mixture to a boil. Simmer for 15 minutes, or until bubbly.
