Spinach and Cheese Manicotti

Adapted from Mr. Food A Little Lighter

  • 8 ozs manicotti pasta, cooked
  • 24 ozs fat-free cottage cheese
  • 8 ozs mozzarella cheese, shredded
  • 1/4 cup parmesan cheese, shredded
  • 1 whole egg
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 10 ozs frozen spinach, squeezed dry
  • 24 ozs low-fat spaghetti sauce
  • 1/4 cup parmesan cheese, shredded
Preheat oven to 350. Prepare a 9"x13" pan with cooking spray; set aside. In a mixing bowl, combine cottage cheese, mozzarella cheese, 1/4 cup parmesan cheese, egg, salt, and black pepper. Mix well. Add spinach. Fill each cooked manicotti shell with spinach mixture. Place seam side down into prepared pan. Pour spaghetti sauce evenly over pasta shells. Sprinkle evenly with remaining parmesan cheese. Bake for 40 minutes, or until heated through.
