Southwestern Turkey Soup

Adapted from Taste of Home Magazine

  • 16 ozs turkey light meat, skinless, cooked and cubed
  • 1/2 cup onions, chopped
  • 16 ozs vegetable juice
  • 1 tbsp chili powder
  • 1 1/2 tsps salt
  • 1/8 tsp cayenne pepper
  • 15 ozs canned red beans, drained and rinsed
  • 10 ozs canned diced tomatoes with green chilies, undrained
  • 10 ozs frozen corn, thawed
Southwestern Turkey Soup
In a large saucepan, combine turkey and onions. Cook until onions are tender. Stir in vegetable juice, chili powder, salt, cayenne pepper, beans, tomatoes, and corn. Mix well. Bring mixture to a boil. Cover and simmer for 25 minutes, or until bubbly.
