Roasted Chicken Breasts and Red Potatoes

Adapted from Taste of Home Magazine

  • 2 lbs red potatoes, cut into 1" cubes
  • 10 ozs fresh baby spinach, washed
  • 1 whole onion, cut into 1" pieces
  • 2 tbsp olive oil
  • 3/4 tsp salt
  • 1 tsp pizza seasoning
  • 1/2 tsp black pepper
  • 1 1/2 lbs chicken breast halves skinless
  • 3/4 tsp paprika
  • 1/4 tsp salt
  • 1/4 tsp black pepper
Roasted Chicken Breasts and Red Potatoes
Preheat oven to 375. Prepare a medium sized roasting pan with cooking spray; set aside. In a large mixing bowl, combine potatoes, spinach, onion, oil, 3/4 teaspoon salt, and half teaspoon black pepper. Mix until all is combined. Place in prepared roasting pan. Arrange chicken breasts over top. Sprinkle tops with paprika, remaining salt, and remaining black pepper. Roast for one hour, or until chicken temperature reaches 180 degrees on thermometer and potatoes are done.
