Pumpkin Chip Muffins

Adapted from Country Woman

  • 3 cups unbleached flour
  • 2 cups granulated sugar
  • 2 tsps baking soda
  • 2 tsps pumpkin pie spice
  • 1 tsp baking powder
  • 1 tsp salt
  • 12 ozs milk chocolate chips
  • 1/2 cup egg whites
  • 15 ozs canned pumpkin
  • 1 cup refrigerated orange juice
  • 1/4 cup olive oil
Pumpkin Chip Muffins
Preheat oven to 400. Prepare 24 standard muffins pans with cooking spray; set aside. In a mixing bowl, combine flour, sugar, baking soda, pumpkin pie spice, baking powder, and salt. Stir in chocolate chips. Add egg whites, pumpkin, orange juice, and oil. Mix until all is moistened. Fill prepared muffin pans three-fourths full. Bake for 18 minutes or until a toothpick inserted in the center comes out clean.
