Pineapple Banana Cake

Adapted from Recipes For Busy People

  • 3 cups unbleached flour
  • 1 tsp baking soda
  • 2 tsps cinnamon
  • 1 cup granulated sugar
  • 1 tsp salt
  • 3 tbsps olive oil
  • 8 ozs crushed pineapple, undrained
  • 2 tsps pure vanilla extract
  • 2 whole eggs, slightly beaten
  • 1 cup bananas, mashed, 2 bananas
Pineapple Banana Cake
Preheat oven to 350. Prepare a 9" x 13" pan with cooking spray; set aside. In a mixing bowl, combine flour, baking soda, cinnamon, sugar, and salt. Add oil, pineapple, vanilla extract, eggs, and bananas. Mix until all is moistened. Pour batter into prepared pan. Bake for 30 minutes or until a toothpick inserted in the center comes out clean.
