Old Fashioned Nut Cake

Adapted from Cake Mix Magic 2

  • Cake:
  • 21 ozs apple pie filling
  • 18 1/4 ozs white cake mix
  • 1/2 cup unbleached flour
  • 1 tsp baking powder
  • 3 whole eggs
  • 3 tbsps olive oil
  • Topping:
  • 1/2 cup light brown sugar, packed
  • 1/2 cup unbleached flour
  • 1 tsp cinnamon
  • 3 tbsps margarine, softened
  • 3 tbsps pecans, chopped
Old Fashioned Nut Cake
Preheat oven to 350. Prepare a 9"x13" pan with cooking spray; set aside. Place apple pie filling in food processor and process until coarsely chopped. In a mixing bowl, combine pie filling, cake mix, half cup flour, baking powder. eggs, and oil. Mix until all is moistened. Spread batter evenly into prepared pan; set aside. Meanwhile, to prepare topping, combine brown sugar, remaining flour, and cinnamon. Cut in margarine with a pastry blender until crumbly. Add nuts. Mix well. Sprinkle evenly over batter in pan. Bake for 40 minutes, or until toothpick inserted in center comes out clean.
