Oatmeal Chocolate Chip Muffins

Adapted from Gifts of Good Taste

  • 1 1/4 cups rolled oats
  • 1 1/4 cups fat-free milk
  • 1 1/4 cups unbleached flour
  • 1/2 cup light brown sugar, packed
  • 4 tsps baking powder
  • 1 tsp salt
  • 5 ozs milk chocolate chips
  • 1/4 cup pecans, chopped
  • 1/2 cup fat-free milk
  • 1 tbsp olive oil
  • 1 whole egg
  • Topping:
  • 1/4 cup light brown sugar, packed
  • 1/4 cup pecans, chopped
Oatmeal Chocolate Chip Muffins
Preheat oven to 400. Prepare 12 standard muffin cups with cooking spray; set aside. In a small bowl, combine oats and 1 1/4 cups milk; let set for 15 minutes, or until milk is absorbed. In a mixing bowl, combine flour, half cup brown sugar, baking powder, and salt. Mix well. Add oat mixture, chocolate chips, 1/4 cup pecans, half cup milk, oil, and egg. Mix until all is moistened. Fill each muffin cup two-thirds full with batter; set aside. In a small bowl, combine remaining brown sugar and remaining pecans. Mix well. Sprinkle evenly over top muffins. Bake for 20 minutes, or until toothpick inserted in center comes out clean.
