Minestrone Pasta Salad

Adapted from General Mills, Inc.

  • 7 ozs shell pasta, cooked
  • 1 c carrots, sliced
  • 1 c bell peppers, chopped
  • 15 1/2 ozs canned dark red kidney beans, drained
  • 15 ozs canned garbanzo beans, drained
  • 14 1/2 ozs no-salt-added diced tomatoes, drained
  • 1/2 c parmesan cheese
  • 2/3 c Italian salad dressing
Minestrone Pasta Salad
In a mixing bowl, combine cooked pasta, carrots, bell peppers, beans, tomatoes, parmesan cheese, and salad dressing. Mix well. Chill several hours before serving.
