Meatballs

Adapted from

  • 1 1/2 cups onions, chopped and cooked
  • 1/3 cup ketchup
  • 3 tbsp bottled lemon juice
  • 2 tbsp pizza seasoning
  • 1 tbsp low-sodium worcestershire sauce
  • 1 cup reduced fat Ritz crackers, crushed
  • 3 lbs ground chicken breast skinless
  • 1 tsp salt
In a mixing bowl, combine onions, ketchup, lemon juice, pizza seasoning, worcestershire sauce, crushed crackers, chicken breast, and salt. Mix well and shape into two inch balls. Preheat oven to 400. Place meatballs onto prepared baking sheet. Bake for 15 minutes, or until lightly browned. Serve or freeze for later use.
