Lower Fat Snickerdoodles

Adapted from Jeanne Jones

  • 2 3/4 c unbleached flour, softened
  • 1 1/2 c granulated sugar
  • 2 tsps cream of tartar
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 c margarine, softened
  • 1 whole egg
  • 1/4 c egg whites
  • 2 tbsps low-fat buttermilk
  • 1 tsp pure vanilla extract
  • 2 tbsps granulated sugar
  • 1 tbsp cinnamon
Lower Fat Snickerdoodles
In a mixing bowl, combine flour, sugar, cream of tartar, baking soda, and salt. Mix well. Add margarine, egg, egg whites, buttermilk, and vanilla extract. Mix until all is moistened. Cover and chill for several hours, or until dough is firm. Preheat oven to 400. Prepare a baking sheet with cooking spray. In a small bowl, combine remaining sugar and cinnamon. Make dough into 1" balls and roll balls into sugar-cinnamon mixture. Place onto prepared baking sheet. Bake for ten minutes.
