Fig Oatmeal Muffins

Adapted from Homemade Bread Cookbook

  • 1 cup quick cooking oats
  • 1 cup fat-free milk
  • 1 cup unbleached flour
  • 1 cup granulated sugar
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1/2 tsp cinnamon
  • 1 whole egg
  • 3 tbsp olive oil
  • 4 oz dried figs, chopped
Fig Oatmeal Muffins
In a small bowl, combine oats and milk; let stand 15 minutes. Preheat oven to 400. Prepare 12 standard muffin cups with cooking spray; set aside. In a mixing bowl, combine flour, sugar, baking powder, salt, and cinnamon. Mix well. Add egg, oil, and figs. Mix until all is moistened. Fill muffin cups evenly with batter. Bake for 20 minutes, or until toothpick inserted in center comes out clean.
