Fig Bread

Adapted from Breads, Quick Breads, & Coffee Cakes

  • 2 c unbleached flour
  • 1 cup granulated sugar
  • 1 tsp cinnamon
  • 1/2 tsp salt
  • 1/4 tsp baking soda
  • 10 ozs fig filling
  • 1/2 cup low-fat buttermilk
  • 1/4 cup olive oil
  • 2 whole eggs
  • 3 tbsps walnuts, chopped
Fig Bread
Preheat oven to 325. Prepare a 9"x5" loaf pan with cooking spray; set aside. In a mixing bowl, combine flour, sugar, cinnamon, salt, and baking soda. Mix well. Add fig filling, buttermilk, oil, eggs, and nuts. Mix until all is moistened. Pour batter into prepared pan. Bake for one hour, or until toothpick inserted in center comes out clean.
