Fig and Pecan Biscotti

  • 4 tbsp margarine, softened
  • 1/2 cup granulated sugar
  • 1/2 cup light brown sugar, packed
  • 1 tsp pure vanilla extract
  • 2 whole eggs
  • 1 cup unbleached flour
  • 1 cup whole wheat flour
  • 1 tsp cinnamon
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 cup pecans, chopped
  • 4 ozs dried figs, chopped
Fig and Pecan Biscotti
Preheat oven to 350. Place a piece of parchment paper onto a baking sheet; set aside. In a mixing bowl, combine margarine and sugars. Add vanilla extract and eggs. Mix well. In a smaller bowl, combine flours, cinnamon, baking powder, and baking soda. Add dry ingredients to wet ingredients. Mix until all is moistened. Stir in pecans and figs. Divide dough in half. Shape each half into a 8"x3" rectangle. Bake 30 minutes or until light brown. Reduce heat to 325. Remove to wire racks and cool for ten minutes. Transfer to a cutting board; cut diagonally with a sharp knife into one inch slices. Place cut side down on baking sheet. Bake for 20 minutes or until firm. Remove to wire racks again to cool completely.
