Cruise Ship Mustard Dressing

Adapted from Tofu Quick & Easy

  • 3/4 lb low-fat tofu
  • 1/3 cup water
  • 3 tbsps dijon mustard
  • 2 tbsps lemon juice
  • 1 tbsp parmesan cheese
  • 1/2 tbsp granulated sugar
  • 1/4 tsp salt
  • 12 ozs leaf lettuce, torn into pieces
  • 1 cup mushrooms, sliced
  • 1 cup croutons
In a food processor, combine tofu, water, mustard, lemon juice, parmesan cheese, sugar, and salt. Process until smooth. Serve on lettuce topped with mushrooms and croutons. Yields: 1 cup (sixteen one tablespoon servings).
