Coffee Time Cake

Adapted from The Kraft Cookbook

  • 1 1/4 c granulated sugar
  • 8 ozs fat-free cream cheese, softened
  • 1/4 cup olive oil
  • 2 whole egg
  • 1 cup bananas, mashed, 2 bananas
  • 1 tsp pure vanilla extract
  • 2 1/4 cup unbleached flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 cup walnuts, chopped
  • 2 tbsp granulated sugar
  • 2 tsp cinnamon
Coffee Time Cake
Preheat oven to 350. Prepare a 13" x 9" pan with cooking spray; set aside. In a mixing bowl, combine 1 1/4 cups sugar, cream cheese, and oil. Add eggs, bananas, and vanilla extract. Mix well; set aside. In another mixing bowl, combine flour, baking powder, and baking soda. Add to wet ingredients. In a smaller bowl, combine walnuts, remaining sugar, and cinnamon. Fold half this mixture into flour mixture. Mix until all is moistened. Pour batter evenly into the prepared pan. Sprinkle top evenly with cinnamon mixture. Bake for 35 minutes, or until a toothpick inserted in the center comes out clean.
