Chocolate Fig Pecan Bars

Adapted from Valley Fig Growers

  • 2 cups unbleached flour
  • 1/4 cup granulated sugar
  • 5 tbsps margarine
  • 8 ozs dried figs, chopped
  • 1/4 cup pecans, chopped
  • 4 ozs semisweet chocolate chips
  • 1/2 cup granulated sugar
  • 3 whole eggs
  • 1/2 cup corn syrup
  • 1 tsp pure vanilla extract
Chocolate Fig Pecan Bars
Preheat oven to 350. Prepare 13"x9" pan with cooking spray; set aside. In a mixing bowl, combine flour and 1/4 cup sugar. Add margarine pieces. Mix until coarse crumbs form. This will be dry. Press onto bottom of prepared pan. Bake for 15 minutes, or until edges are brown. Sprinkle figs, pecans, and chocolate chips evenly over top; set aside. In another mixing bowl, combine remaining sugar, eggs, corn sryup, and vanilla extract. Mix well. Pour over crust. Return to oven and bake for 20 minutes, or until filling is firm around edges and slightly soft in center.
