Caramel Walnut Pie

Adapted from Better Homes & Gardens, All Time Favorite Pies

  • Crust:
  • 1 1/2 c low-fat graham cracker crumbs
  • 1/4 c margarine, softened
  • 3 tbsps granulated sugar
  • Filling:
  • 6 ozs caramel candy, 20 pcs
  • 1 1/4 c fat-free milk
  • 1 env unflavored gelatin
  • 1/4 c cold water
  • 1 tsp pure vanilla extract
  • 1/8 tsp salt
  • 1 c Cool Whip Free, thawed
  • 3 tbsps walnuts, chopped
Caramel Walnut Pie
To prepare crust, combine crumbs, margarine, and three tablespoons sugar in a mixing bowl. Press mixture firmly in the bottom of a 9" pan. Spreading crumb mixture evenly in pan. Chill 1 hour, or until firm. Meanwhile, to prepare filling, combine caramels and milk in a saucepan. Heat over low heat for 20 minutes or until candy is melted, stirring frequently. Meanwhile, soften gelatin in cold water. Add softened gelatin mixture to caramel mixture., stir until gelatin is dissolved. Stir in vanilla extract and salt. Chill gelatin mixture to the consistency of corn syrup, stirring occasionally. Watch closely, since caramels make the mixture set up very quickly. When gelatin is partially set, fold in whipped topping and walnuts. Chill until mixture mounds when spooned. Turn into crust. Chill several hours or until set.
