Buttermilk Brownies

Adapted from All Time Favorites Cookbook Volume 2

  • 2 cups unbleached flour
  • 2 cups granulated sugar
  • 1 tsp baking soda
  • 1/2 cup unsalted butter
  • 1/2 tsp salt
  • 1/3 cup cocoa powder, sifted
  • 2 whole eggs
  • 1/2 cup low-fat buttermilk
  • 2 tsps pure vanilla extract
Buttermilk Brownies
Preheat oven to 350. Prepare a jelly roll pan with cooking spray; set aside. In a mixing bowl, combine flour, sugar, baking soda, and salt; set aside. In a saucepan, combine butter, cocoa powder, and one cup water. Bring mixture just to boiling, stirring constantly. Remove from heat. Add cocoa mixture to flour mixture. Mix until all is combined. Stir in eggs, lowfat buttermilk. and vanilla extract. Mix well. Pour batter evenly into prepared pan. Bake for 25 minutes, or until toothpick inserted in center comes out clean.
