Breakfast Casserole

Adapted from Taste of Home Magazine

  • 9 ozs light pork sausage
  • 1/2 cup onions, chopped
  • 2 whole eggs
  • 1/2 cup egg whites
  • 2 cups fat-free milk
  • 1 1/2 tsps ground mustard
  • 1 1/2 tsps salt
  • 1/4 tsp black pepper
  • 8 slices whole wheat bread slices, cubed
  • 4 ozs cheddar cheese, shredded
Breakfast Casserole
Prepare a 13"x9" pan with cooking spray; set aside. In a skillet, cook sausage and onions until sausage is no longer pink; set aside to drain and cool. In a mixing bowl, combine eggs, egg whites, milk, mustard, salt and black pepper. Add bread cubes, cheese, and sausage to mixture. Mix until well combined. Pour into prepared pan. Cover and chill for five hours, or overnight. Remove casserole from refrigerator for 30 minutes. Preheat oven to 350. Bake, uncovered for 35 minutes, or until knife inserted in center comes out clean.
