Banana Oat Muffins

Adapted from Dr. Cookie Cookbook

  • 2 cup unbleached flour
  • 1/2 cup rolled oats
  • 1 tsp baking powder
  • 1 tsp pumpkin pie spice
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1 whole egg
  • 1 cup light brown sugar, packed
  • 2 tbsps olive oil
  • 1 cup bananas, mashed, 2 bananas
  • 1/4 cup fat-free milk
  • 3/4 cup fat-free plain yogurt
Banana Oat Muffins
Preheat oven to 400. Prepare 12 standard muffin pans with cooking spray; set aside. In a mixing bowl, combine flour, oats, baking powder, pumpkin pie spice, baking soda, and salt. Mix well. Stir in egg, brown sugar, oil, bananas, milk, and yogurt. Mix until all is moistened. Spoon batter evenly into prepared pans. Bake for 20 minutes, or until toothpick inserted in center comes out clean.
