Banana Bran Nut Bread

Adapted from Kellogg Company

  • 1 cup granulated sugar
  • 1 cup unbleached flour
  • 3 tbsps walnuts, chopped
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 cup All Bran Cereal
  • 1 cup bananas, mashed, 2 bananas
  • 2 whole eggs
  • 2 tbsps olive oil
  • 1 tsp pure vanilla extract
Banana Bran Nut Bread
Preheat oven to 350. Prepare a 8"x5" loaf pan with cooking spray; set aside. In a shallow bowl, combine sugar, flour, walnuts, baking powder, baking soda, and salt. Mix well; set aside. In a mixing bowl, combine cereal, bananas, eggs, oil, and vanilla extract. Mix well and let stand for ten minutes, or until cereal has softened. Add flour mixture. Mix until all is moistened. Pour batter into prepared pan. Bake for 35 minutes, or until toothpick inserted in center comes out clean.
