Baked Three Cheese Spaghetti

Adapted from Hot Recipes in Cool Dishes

  • Marinara Sauce:
  • 1/2 cup onions, chopped
  • 28 ozs canned diced tomatoes, undrained
  • 8 ozs no-salt-added tomato sauce
  • 6 ozs no-salt-added tomato paste
  • 1 tsp basil
  • 1 tsp oregano
  • 1 tsp granulated sugar
  • 1/2 tsp pizza seasoning
  • 1/2 tsp salt
  • 1/4 tsp red pepper flakes
  • Casserole:
  • 16 ozs angel hair spaghetti, cooked and drained
  • 15 ozs fat-free cottage cheese
  • 1/4 cup fat-free milk
To prepare marinara sauce, combine onions, diced tomatoes, tomato sauce, tomato paste, basil, oregano, sugar, half teaspoon pizza seasoning, half teaspoon salt, and crushed red pepper in a 6-quart cooker. Mix well. Cover and cook on high for two hours or until heated through. Preheat oven to 350. Prepare a 9"x13" pan with cooking spray; set aside. In a mixing bowl, combine, cooked spaghetti, cottage cheese, milk, and remaining salt. Mix well. Spread into prepared pan; set aside. In a large saucepan, cook onions and bell peppers until tender. Stir in marinara sauce and parmesan cheese. Mix well. Pour evenly over spaghetti in pan. Sprinkle top with cheese and remaining pizza seasoning. Cover with foil and bake 25 minutes. Uncover and bake for 20 minutes longer, or until bubbly.
