Applesauce Nut Bread

Adapted from The J.M Smucker Company

  • 2 c unbleached flour
  • 1 c granulated sugar
  • 1/2 c pecans, chopped
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/8 tsp salt
  • 1 c sweetened applesauce
  • 1/4 c egg whites, slightly beaten
  • 3 tbsps olive oil
  • 3 tbsps fat-free milk
Applesauce Nut Bread
Preheat oven to 350. Prepare a 9"x5" loaf pan with cooking spray; set aside. In a mixing bowl, combine flour, sugar, walnuts, baking soda, baking powder, cinnamon, nutmeg, and salt. Add applesauce, egg whites, oil, and milk. Mix well. Spread into prepared pan. Bake for one hour, or until toothpick inserted in center comes out clean.
