Applesauce Cake Loaf

Adapted from Fall Baking

  • 2 cups unbleached flour
  • 1 cup light brown sugar, packed
  • 1 cup raisins
  • 1/4 cup pecans, chopped
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 tsp cloves
  • 1/8 tsp salt
  • 1 cup chunky applesauce
  • 3 tbsps margarine, softened
  • 1 whole egg
  • 1 tsp pure vanilla extract
Applesauce Cake Loaf
Preheat oven to 350. Prepare 9" x 5" loaf pan with cooking spray and flour; set aside. In a mixing bowl, combine flour, sugar, raisins, pecans, baking soda, cinnamon, cloves, and salt. Add applesauce, margarine, egg, and vanilla extract. Mix until moistened. Pour batter into prepared pan. Bake for one hour and 15 minutes, or until toothpick inserted in center comes out clean.
