Apple Nut Coffee Cake

Adapted from Quick Cooking Magazine 2002

  • 3 tbsps olive oil
  • 1 cup granulated sugar
  • 1 whole egg
  • 1 tsp pure vanilla extract
  • 1 cup unbleached flour
  • 2 tbsps unbleached flour
  • 1 tsp cinnamon
  • 1 tsp apple pie spice
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 lb Granny Smith apples, chopped and peeled
  • 1/4 cup walnuts, chopped
  • 1/4 cup granulated sugar
Apple Nut Coffee Cake
Preheat oven to 350. Prepare a 11"x7" baking dish with cooking spray; set aside. In a mixing bowl, combine oil, one cup sugar, egg, vanilla extract, flour, cinnamon, apple pie spice, baking powder, baking soda, and salt. Mix until all is moistened. Fold in apples and walnuts. Pour batter into prepared baking pan. Sprinkle top evenly with remaining sugar. Bake for 35 minutes, or until toothpick inserted in center comes out clean.
