Turkey Tamale Pie

8 servings

8  ozs  turkey light meat, skinless, cooked and cubed  1/2 c  cornmeal 
4 1/2 ozs  canned green chiles, drained and chopped  3/4 c  fat-free milk 
1 1/4 ozs  low-sodium taco seasoning mix  1  whole  egg 
4  ozs  cheddar cheese, shredded  11  ozs  Mexicorn, drained 
1/2 c  low-fat baking mix  
Preheat oven to 400. Prepare a 9" glass dish with cooking spray; set aside. In a small bowl, combine turkey, chiles, and taco seasoning mix. Place in prepared dish. Sprinkle cheese on top; set aside. In a mixing bowl, combine baking mix, cornmeal, milk, egg, and canned corn until combined. Pour over turkey mixture in dish. Bake for 30 minutes, or until toothpick inserted in center comes out clean.
