Turkey Muffin-Wiches

4 c low-fat baking mix 16 ozs turkey light meat, skinless, cooked and cubed 
1/2 c egg whites, slightly beaten 1 c low-fat cheddar cheese, shredded 
2/3 c fat-free milk  
Preheat oven to 375. Prepare 16 standard muffin cups with cooking spray; set aside. In a mixing bowl, combine baking mix, egg whites, and milk. Stir until moistened. Add turkey and cheese. Spoon batter into evenly between prepared cups. Bake 20 minutes. Cool 5 minutes.
These muffin-wiches can be prepared in advance and stored in an airtight plastic bag in the freezer for up to two months.
