Turkey Corn-Muffin-Wiches

15 servings

17 ozs corn muffin mix 1 c onions, chopped 
1/2 c egg whites, slightly beaten 1 c bell peppers, chopped 
2/3 c fat-free milk 1/2 tsp sage 
16 ozs turkey light meat, skinless, cooked and cubed  
Preheat oven to 400. Prepare 15 standard muffin cups with cooking spray; set aside. Empty packages of corn muffin mixes into a mixing bowl. Add egg whites and milk. Mix well using a fork. Stir in turkey, onions, bell peppers, and sage. Spoon batter into prepared cups. Bake 15 minutes. Cool five minutes. Serve warm or cold.
These muffin-wiches can be prepared in advance and stored in an airtight plastic bag in the freezer for up to two months.
